Creamy Miso Corn Soup

Ingredients:

  • 3 cups corn

  • 1 tbsp butter/oil

  • 2 tbsp miso

  • 1 onion, diced

  • 2 garlic cloves

  • 2 cups veggie stock

  • 1 cup cream/coconut milk

  • 1 tsp paprika

  • Salt & pepper

Instructions:

  • Dice the onion and garlic and saute until they are both translucent

  • Simmer for about 10-15 minutes with corn and vegetable stock.

  • Blend for a smooth consistency.

  • Add cream and miso, mix well and serve.
