Creamy Miso Corn Soup
Ingredients:
3 cups corn
1 tbsp butter/oil
2 tbsp miso
1 onion, diced
2 garlic cloves
2 cups veggie stock
1 cup cream/coconut milk
1 tsp paprika
Salt & pepper
Instructions:
Dice the onion and garlic and saute until they are both translucent
Simmer for about 10-15 minutes with corn and vegetable stock.
Blend for a smooth consistency.
Add cream and miso, mix well and serve.
