Miso Cream of Mushroom Soup

  • Ingredients:

    • ½ oz dried shiitakes or mushroom of choice. Works great with porcinis as well

    • 4 cups water

    • 1 tbsp oil

    • 1 can coconut milk

    • 2 tbsp miso

    • 1–2 tsp soy sauce/tamari

    • 1 tsp honey/maple (opt.)

Instructions:

  • Soak mushrooms for 15-20 minutes

  • Saute mushrooms in soaking liquid.

  • Add rest of the ingredients except for the miso and mix well.

  • Take off heat, add miso, stir well and serve.
