Each month will feature a very limited release of two unique misos selected from the best of my experimental batches. These misos are crafted with unusual combinations of beans, seeds, roots, mushrooms, wild ingredients, grains, and koji, then fermented for almost a year to develop deep savory complexity and character.
Some releases may focus entirely on culinary exploration while others may highlight more medicinal or botanical ingredients. Every month will be different depending on what has developed the most interesting flavor, aroma, texture, and depth during fermentation.
Many of these batches are extremely limited, sometimes fewer than 15 jars total, and some may never be produced again.
Each release includes:
Two small batch experimental misos
Suggested uses and pairing ideas for each jar
Access to limited ferments not available through regular releases
This project is a way of sharing the strongest and most interesting results from my ongoing fermentation work as they become ready rather than producing the same misos repeatedly.
